Mass of Christian burial for Elpidia Diaz, 86, a long-time resident of Hereford, will be celebrated at 10:30 a.m. Thursday, May 30, 2019 at La Iglesia De San Jose with the Reverend Nestor Lara, pastor, as celebrant. Interment will be at St. Anthony’s Catholic Cemetery. Arrangements are under the direction of Parkside Chapel Funeral Home. Mrs. Diaz passed away Saturday, May 25, 2019 in Hereford. A prayer vigil will be read at 6:00 p.m. Wednesday, May 29, 2019 at Parkside Chapel Funeral Home.

Elipidia A. Diaz was born March 4, 1933 in Santa Maria Del Rio, San Luis Potosi, Mexico. When she was growing up she learned how to weave shawls. Elpidia was a devoted Catholic, excellent cook, and housekeeper. She had a Taco Night, Chicken Saturday and made the Best Ham Sandwich according to her great children, was a great seamstress, had a green thumb, loved to plant flowers and planted a garden on Mother’s Day every year with her son in law. Elipidia would recite the Rosary every morning and evening, loved music was very generous. She married Alfredo Diaz, in Anton, Texas.

The legacy she leaves includes, four sons, Rodrigo Diaz, of Hereford, Alfredo Diaz and wife Lina of Beeville, Texas, Rogelio Diaz of Gruver, Juan Cardens and wife Sylvia of Hereford, three daughters, Angelica Alanis and husband Adam of Homestead, Florida, Mary Ortiz and husband Fidel of Friona, Texas, Graciela Diaz of Hereford, two sisters, Maximina Salazar and Magdalena Salazar, twenty two grandchildren, and many great grandchildren.
